Breakfast Mac n' Cheese

2 Tbsp butter
3 cups cooked elbow pasta
5 eggs
1 Tbsp milk
1/4 tsp salt (or less is using a salty cheese)
Pinch of pepper (you can use white pepper too)
Pinch of onion powder (optional)
4 oz grated Cheddar cheese
1 cup chopped broccoli
1/2 cup diced sauted onions
1/4 cup unflavored bread crumbs
Optional Add-Ins: red bell peppers, crumbled bacon, cooked sausage, or diced ham (I used bacon bits.)

Melt the butter in a 10 - 12 inch non-stick skillet over medium heat. Stir the macaroni in the butter and let warm (Mix in broccoli, onions or any other add-ins now).

Beat the eggs with the milk, salt, and pepper until thoroughly blended. Set aside about 1/4 cup of the grated cheese and stir the remainder into the eggs. Pour the egg/cheese mixture over the macaroni. Gently stir to blend evenly.

Set the oven to broil. Allow the eggs to cook on the stove top (don’t stir them) until the edges are set. Sprinkle the reserved cheese (I sprinkled bacon bits over the cheese ).

Top with bread crumbs and set the pan under the lowest part of the broiler. Cook until the top is set and the crumbs are nicely browned (broilers vary; watch carefully so that the top doesn’t burn.)
