Corned Beef Hash

1 can corned beef hash
3 strips cooked bacon and crumbled
1/2 can sauerkraut
1 medium onion finely chopped
1 tbs fresh parsley finely chopped
3 medium potatoes boiled and cut into thick chunks
1 tbs minced garlic
1 tbs butter

Saute onion and sauerkraut in butter and garlic. Set aside.

Set corned beef hash and potatoes in skillet over medium heat. Let it sit so that it gets crispy before turning it over. Add in fresh parsley, sauerkraut mixture and bacon. Pepper to taste.

I like hearty chunks of potatoes for a homemade look! I read online that leftover corned beef hash makes a great sandwich with mustard.
