Shrimp Omelet

8 eggs
1/2 cup chopped green onions
1/2 cup chopped canned mushrooms
1 cup grated medium cheddar cheese
1/2 cup shredded shrimp

Preheat oven to 350.

Separate eggs. Beat egg whites until stiff. Beat egg yolks with salt and pepper to taste. Fold yolks into egg whites. Add other ingrediens one at a time, folding into mixture. Place in a greased 8x8 pan and bake for 35 to 40 minutes.

Cheese Sauce:
1 cup milk
1 1/2 tbs flour
2 tbs butter
3/4 cup grated medium cheddar cheese
4 oz. shredded shrimp

You can make this while omelet is baking! Place milk in sauce pan and add flour. Stir until well blended. Add butter. Cook over medim heat and stire constantly until thickened. Add cheese a little at a time. Stir until melted and well blended and then add shrimp. Keep warm until serving time. Terry says left over cheese sauce is great over toast or scrambled eggs!
