Sweet Spring Salad
Ingredients:
• Strawberries
• Oranges
• Mint leaves
• Brown Sugar
** The dish featured on TV had about 2 1/2 pounds of strawberries, 3 oranges, 1 standard package of mint leaves and 3 tablespoons of brown sugar, but the proportions should be made to your liking.
Directions:
• Wash and slice strawberries (the long way) into thin slices – about 4-7 slices per strawberry.
• Peel oranges. Using a knife, shave the excess light “skin” attached to the orange slices, if you’d like, for aesthetics. Cube orange pieces into small, thumbnail-sized pieces.
• Wash mint leaves and mince into small pieces.
• Combine all ingredients in a large bowl. Add several tablespoons of brown sugar, to taste.
Dish can be served as a breakfast fruit salad, as a pre-meal salad or appetizer, or as a dessert, accompanied with vanilla ice cream, yogurt, or fruit sorbet.
