Sweet Potato Pineapple Rings

2 cups mashed canned or cooked sweet potatoes (I used 2 15-oz. cans.)
1/2 cup packed brown sugar
3 tbs melted butter
1/4 tsp salt
1/4 tsp cinnamon
1/4 tsp nutmeg
1 20 oz can sliced pineapples
10 miniature marshmallows (I used about 40.)

In a large bowl combine sweet potatoes, brown sugar, butter, salt, cinnamon and nutmeg. Put pineapple slices in a greased 9x13 baking dish. Top each slice with 1/4 cup mixture and one marshmallow. (I put about 6 marshmallows atop each one to make it look fuller). Bake at 400 degrees for 10 to 15 mins.

Recommended as a good side dish at Thanksgiving - but I would eat it as a breakfast side with an omelet!
