French Apple Cake

Fruit Bottom:

• 2 cups sliced apples (or 3)
• 2/3 cups sugar
• 2 tsp lemon juice
• 1 tbs flour
• 2-4 tbs butter
• Cinnamon to taste

Grease 9-inch pie pan. Place sliced apples on bottom and sprinkle with sugar, lemon juice and cinnamon. Dredge with flour and dot with butter.

Cake Batter Top:

• 1 cup sifted flour
• 1/2 cup sugar
• 1 tbs baking powder
• 1/4 tsp salt
• 2 egg yolks
• 1 tbs melted butter
• 1/4 cup milk
• 1 tsp vanilla

Sift flour, sugar, baking powder and salt into bowl. Beat and add egg yolks, butter, milk and vanilla. Cover fruit with batter. (Batter will be thick.) Bake at 350 for 55 minutes.
