Peanut Butter and Jelly Muffins

• 1 3/4 c. cornflakes
• 1 c. milk
• 1/2 c. peanut butter
• 1 egg
• 1 1/4 c. flour
• 1 tsp baking powder
• 1/2 tsp salt
• 1/4 c. jam or jelly
• 1/2 cup brown sugar

Preheat oven to 400.

Combine cornflakes and milk. Let stand to soften cereal. Add peanut butter, sugar, egg and beat until smooth.

Combine flour, baking powder, salt and mix well. Add to cereal mixture and stir until just moistened.

Fill 12 paper muffin cups 1/2 full of batter and top with 1 tsp jam. Top with remaining batter.

Bake for 16 to 18 minutes.
