Good For You Muffins

• 1 cup (8 oz. can) crushed pineapple
• 3 cups flour
• 2 cups sugar
• 1 tsp baking soda
• 1 tsp baking powder
• 1 tsp salt
• 1 tsp cinnamon
• 2 eggs plus 1 egg white
• 2 tsp vanilla
• 2 cups shredded carrots
• 1/2 cup applesauce
• 1/2 cup oil

Preheat oven to 350. Drain pineapple (reserve juice).

In large bowl, whisk together flour, sugar, baking soda and powder, salt and cinnamon. Make well in center and drop in eggs, egg white, oil, vanilla and reserved pineapple juice.

Beat at medium speed until blended (about 1 1/2 mins). With a spoon, stir in fished pineapple, carrots and applesauce. Spoon batter into baking cups. Bake until a toothpick stuck in the center of muffin comes out clean, about 22 minutes.

Remove baking tins, cool for about 2 minutes and then take them out of tins. (Makes 24 muffins)
