Microwave Apricot Oatmeal Bars

OK ... you may recognize this one - it's an old recipe I tried long ago and botched it. This time I followed it - and I think it will work - for my last Sunday. ... I suppose I finally learned how to cook!

• 1/2 c. chopped dried apricots
• 1 egg
• 1/2 c. cooking oil
• I added a 1/4 cup brown sugar this time!
• 1/2 c. quick oatmeal
• 1/2 c. whole wheat or all-purpose flour
• 1/3 c. water
• 1 tsp. cinnamon
• 1/2 tsp. soda
• 1/2 tsp. cloves
• Powdered sugar, if desired

Combine apricots and water in 1 quart microwaveable bowl, microwave on high uncovered for 2 1/2 to 3 minutes or until apricots are softened, stir once. Let stand for 5 minutes. Then blend in brown sugar, egg and oil.

Add oats and flour and spices, stir just until moistened. Spread in ungreased 10 x 6 inch microwave safe baking dish.
Microwave on high for 4 1/2 to 5 minutes or until top springs back when lightly pressed with finger.
