Matthew's Dutch Baby
• 3 eggs
• 3/4 cup all-purpose flour
• 3/4 cup warm milk, zap 30 seconds in microwave
• 1 tbsp. sugar
• 2 tsp. vanilla extract
• Pinch of salt
• 3 tbsp. unsalted butter

Preheat oven to 400 degrees.

Put butter in large saute pan, nonstick is OK, not necessary. Put pan in oven until butter melts.

Mix remaining ingredients in blender and mix until blended.

Pour ingredients in a hot saute pan and bake for 20 minutes or until golden brown. Let cool on cooling rack and sprinkle with powdered sugar and serve with maple syrup.

Optional: Serve with fruit compote.
