Broccoli Muffins

1 3/4 cup flour
1 cup Quick oats
1/4 cup sugar
2 tsp baking powder
1/4 tsp Salt
1 cup milk
1/3 cup vegetable oil
1 egg, lightly beaten
1 cup chopped broccoli, blanched
1/2 cup shredded cheddar cheese

Preheat oven to 400 degrees F. Line 12 muffin cups with papers.

Stir flour, oats, sugar, baking powder and salt. In separate bowl mix milk, oil and egg; add to dry ingredients, stirring just to moisten.

Fold in broccoli and cheese. Spoon into muffin tins; bake 18 to 20 minutes or until top springs back when lightly touched.

Yield: 1 Dozen
