CREPES 2 c. flour
5 tbsp. sugar
5 eggs
2 1/2 c. milk
1/4 c. corn oil
Pinch salt
Mix ingredients. Spoon 1 1/2 ounces into hot skillet. Roll around to make thin layer. Cook 15-20 seconds. Turn over with spatula. Cook 15-20 seconds. Slide out of skillet onto plate. Fill with apple filling or whatever is desired!!
APPLE FILLING 10 cooking apples (Cortland, McIntosh, Granny Smith, etc.)
1/4 c. sugar or 3 packets sugar substitute
2 tsp. cinnamon
1/3 c. melted butter
Peel, cored and slice apples. Add to melted butter over medium heat. Sprinkle with sugar and cinnamon. Cook until apples are soft and slightly brown. Stir occasionally to prevent sticking. Fill crepes and fold sides. Serve hot. Top with whipped cream (optional).
