Baked Bacon Pineapple PancakesBy Marlee Ginter
1 slightly beaten egg
2/3 c. milk 2 tbsp. butter, melted 1 c. flour 2 tsp. baking powder 1 tbsp. sugar 1/4 tsp. salt 1/4 tsp. nutmeg 1 (8 oz.) can sliced pineapple, drained and chopped 5 slices of bacon OR 1 (8 oz.) sausage, cut lengthwise 1 tbsp. sugar 1/4 tsp. cinnamon In mixing bowl combine eggs, milk and butter. Stir together flour, the first tablespoon sugar, the baking powder, salt and nutmeg. Stir into liquid ingredients just until moistened. Stir in pineapple. Spread in greased 12x9 inch baking dish. Fry bacon until ALMOST cooked (it will finish in oven). I let it soak in some of the pineapple juice for a few seconds too! Arrange bacon on top, sprinkle with remaining sugar and cinnamon. Bake 400 oven for 18 to 20 minutes or until done. Cut in squares. Serve hot. Makes 6. Marlee Ginter KOMO 4 News Reporter |
