Sweet Potato Doughnuts

1/2 cup light brown sugar
1 cup sweet potato puree
1/2 cup milk
1 large egg white
1 tbsp trans fat free margarine, melted
1 tsp vanilla extract
1 cup all purpose flour
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp cinnamon
1/4 cup confectioners' sugar

Preheat oven to 350. Coat doughnut mold or mini muffin tin with non fat cooking spray. In a large bowl mix sugar, sweet potato, milk, egg white, margarine and vanilla. Add flour, baking soda, baking powder and cinnamon.

Bake 20 to 25 minutes or until toothpick comes out clean after inserted. When cool, dust with confectioners' sugar!
