Sweet Potato Breakfast Squares
1/2 c. oil
1/4 c. brown sugar
1/4 c. white sugar
1 egg
1/2 tsp. vanilla
1/4 tsp. soda
1/2 tsp. baking powder
1/4 tsp. salt
1 1/2 c. quick cook oatmeal
2 c. bran flakes (crushed to equal 1 c.) (I crushed frosted shredded wheat cereal instead!)
3 tbsp. chopped nuts
3/4 c. milk
1/2 c. mashed sweet potatoes
Topping
1 tbsp. sugar
1/2 tsp. cinnamon
Blend together oil, sugar, egg and vanilla. Combine soda, baking powder, salt and cereals. Blend cereal mixture and other ingredients: nuts, milk and sweet potatoes into oil mixture. Combine sugar and cinnamon and sprinkle over the top of the unbaked dough.
Place the dough in an ungreased 9"x9" pan. Bake at 375 degrees for 25 to 30 minutes. Cut into 24 squares when cooled.
VARIATIONS: Substitute 1/3 cup honey and reduce the milk to 2/3 cup. (I cut them into 16 squares instead of 24.)
