Granola Bars
3/4 c regular rolled oats
3/4 c chopped almonds, walnuts or pecans (I used mixed nuts!)
3/4 c golden or dark raisins or both (I threw in some dried cranberries too!)
2 large egg whites
1/3 c canola oil
3/4 c light brown sugar
3/4 c peanut butter
1 tsp cinnamon
1/2 tsp salt
Stir oatmeal, nuts and raisins in a bowl. Combine the remaining ingredients in a mixing bowl, then place the bowl over a pan of simmering water - gently stir until the sugar has melted. Stir in the oatmeal mixture. Spread the batter in a 9x13 greased and parchment lined pan.
Bake at 325 degrees for 30 minutes. Cool, invert, peel off the parchment, cut into 2" bars. Store in a plastic container in between sheets of wax paper. Freeze well.
