1 3/4 cups flour
5 tbsp. sugar
2 tsp. baking powder
2 tbsp. corn meal (optional)
1 tsp. baking soda
1/2 tsp. salt
2 eggs, separated
1 cup buttermilk, plain yogurt or sour cream
1 cup milk
6 tbsp. melted butter or shortening
10 chocolate covered cherries, chopped into small pieces
Whip egg whites, set aside. Beat egg yolks and stir in milk. In separate bowl mix flour, sugar, baking powder, soda and salt. Beat dry mixture into wet mixture. Add melted butter or shortening.
When thoroughly combined, fold in beaten egg whites.
Pour batter into frying pan on medium heat to form medium sized pancake. Sprinkle one to two tbsp of chopped chocolate covered cherries (more if you like!) and let cook until top bubbles then flip until cooked through.
A wonderful Valentine's Day treat for breakfast!
You can make this batter ahead of time and store it in a sealed container in the refrigerator so that it will be ready for breakfast each morning!
