Hunger Challenge Day 2: An uninspired dinner

It's Day Two of the Hunger Challenge, and I am actually thrilled to begin today's report with an accounting error, in my favor! In tallying the grocery store and produce stand visits, my math was a little fuzzy. I was off by an entire dollar, so I actually ended Monday with a balance of $12.56 to last for the rest of the week. And yes, I detect you're either smiling or laughing at me at this point, but I gotta say: When every dollar counts, finding an extra buck can really make your day!

Thanks again for the comments and support from yesterday and keep those comments and suggestions coming. I also noticed there are a few challenges for this Hunger Challenge. Some of you have written saying you can eat for much less than $7 a day. I really respect your efforts -- that's amazing! All I know is I have to do it on $7 a day, and it's not easy when you're used to dealing with more. In just two days, I'm realizing what many of my neighbors have to go through on a regular basis to balance their food budgets.

So, last night I got home, and felt very uninspired in the kitchen. Long story short, it was a peanut butter sandwich dinner, some yogurt, and an apple. The good news, I haven't spent any more money on food, and what food I have will last for another day.

Yesterday, I wrote about how boring my menu for the week is looking. After tasting it for a day and a half now, it is kind of blah. I think I made some poor choices at the grocery store, and I was too tired to make something really good last night, but isn't that real life?

Do you ever get home and not feel like cooking? Tonight, I will get in the kitchen and make something that will be tasty, and -- most importantly -- last for a few days.

Oh yeah, some have asked about me not buying any meat. Not to get too personal, but the doc has me watching my cholesterol, so I'm trying to make this an opportunity to try more vegetables, and maybe get my protein from other sources.

Honestly, I'm really loving "re-discovering" how much I enjoy vegetables. The downside to my new eating habit is this week. While I was able to buy some produce, buying fresh produce to last the week will be impossible. In a society where we're trying to get people to take better care of themselves and eat better, some just can't afford to do so. That's really a bummer.
