Bread Pudding - 9/30/2006

Ingredients

2 whole eggs 1 egg yolk
8 Tbl. sugar 1 1/4 cup half and half or milk
1 1/4 cup heavy cream 1 Tbl. vanilla
1/4 tsp. nutmeg 1/8 tsp. salt
4 cups thick white bread 3 1/2 Tbl. butter
1/2 tsp. cinnamon  
   
   
   
   

Directions

Whisk eggs, egg yolk and 6 Tbl. sugar in a large bowl. Add half and half, heavy cream, vanilla, nutmeg and salt. You can substitute whole milk for the half and half.
Cut bread into 1/2" square pieces. 4 slices of a 3/8" thick loaf should give you 4 cups.

Add 3 cups of the sliced bread to the egg mixture. Let soak for 20 minutes at room temperature..

Melt 1 1/2 Tbl. butter and set aside. Use the remaining butter to grease a 8"x 8" baking dish.

Pour the bread mixture into the dish. Add the extra cup of sliced bread on top. Brush the top pieces of bread with melted butter.

Mix 2 Tbl. sugar and the cinnamon. Sprinkle over the top of the dish. Bake at 350 degrees for 45 minutes. The pudding will be golden brown and still slightly loose in the middle. Serve with vanilla ice cream and caramel sauce. Serves 4-6.
