Ingredients

Herbed Garlic Soup - 10/23/1998

1 stalk chopped celery 1/2 sliced leek
3 sliced shallots 8 cloves sliced garlic
1 diced carrot 1 qt. chicken stock
2 oz. butter 4 oz. white wine
Assorted herbs

Directions

Saute garlic in butter. Add carrots, shallots, leeks and celery. Cook until soft. Add white wine and reduce by 2/3. Add chicken stock. Take assorted herbs (peppercorns, bay leaf, parsley sprig, celery top, garlic clove, thyme) and tie into a piece of wet cheesecloth. Add to soup. Simmer for 30-40 minutes. Serves 8.
