Herbed Garlic SoupBy Todd JohnsonIngredients
DirectionsSaute garlic in butter. Add carrots, shallots, leeks and celery. Cook until soft. Add white wine and reduce by 2/3. Add chicken stock. Take assorted herbs (peppercorns, bay leaf, parsley sprig, celery top, garlic clove, thyme) and tie into a piece of wet cheesecloth. Add to soup. Simmer for 30-40 minutes.
