Ingredients

Italian Bread Salad - 3/19/1999

3 cups day old Italian bread 2 diced tomatoes
1 diced cucumber 1/2 cup diced green pepper
1/2 cup chopped red onion 1 cup basil leaves
3 cloves garlic 1/4 cup Balsamic vinegar
1/3 cup olive oil 1/8 tsp. Kosher salt
Black pepper to taste

Directions

Mix bread and vegetables in a bowl. Puree garlic in a food processor. Add basil leaves and grind to a paste. Pour in Balsamic vinegar. Slowly drizzle in olive oil with machine running. Season with salt and pepper. Pour dressing over salad. Let sit at room temperature until dressing soaks into bread. Mix well. Serves 4.
