Peppered Tuna Salad

Ingredients

Peppered Tuna Salad - 3/22/1999

6 oz. piece of tuna 1 cup Panko bread crumbs
1/4 tsp. Cayenne pepper 1/4 tsp. chili powder
1/4 tsp. granulated garlic 1/4 tsp. onion powder
1/4 tsp. paprika 1 tsp. crushed black peppercorns
Salt to taste 2 Tbl. vegetable oil
4 oz. salad greens 1 sliced tomato
2 oz. diced cucumber 1 sliced carrot
3 sprigs cilantro

Directions

Mix Panko bread crumbs with Cayenne pepper, chili powder, granulated garlic, onion powder, paprika, crushed black pepper and salt. Press tuna into mix on both sides. Sear tuna in oil over medium high heat. Cook until both sides are brown and tuna is warm in the middle. Cut into 3-4 pieces. Serve on top of greens. Garnish with tomato, cucumber, carrot and cilantro. Top with your favorite dressing. Serves 1.
