Pear Vinaigrette

Ingredients

Pear Vinaigrette - 12/6/1999

1 ripe Comice or Barlett pear 1 Tbl. grated onion
1/4 cup honey 1 tsp. Dijon mustard
1/2 tsp. Kosher salt 1/2 cup apple cider vinegar
3 Tbl. canola oil 2 Tbl. hazelnut oil

Directions

Peel, core and coarsely chop pear. Combine pear, onion, honey, mustard, salt and vinegar in a food processor or blender. Blend until smooth. Add canola and hazelnut oils. Pulse until mixture thickens slightly. Use immediately or cover and refrigerate for up to 1 week. Serve over your favorite salad. Serves 4.
