DirectionsBoil tomatoes to loosen skin, then let cool. Peel skin off tomatoes and slice into thin pieces. Squeeze lemon juice over tomatoes. Add salt, nutmeg, cinnamon, sugar and flour. Mix well. Fill pie dish and cover with the other crust shell. Tuck top crust under bottom one and pinch together. Brush with egg wash. Bake at 350-375 degrees for 50 minutes to 1 hour until crust is golden brown and the tomatoes are soft. Serves 6.Recipe from Ken Sharp, El Gaucho |
