DirectionsTo make syrup, heat water, sugar, orange and lemon juice and zest and ginger. Bring to boil, then let simmer 2-3 minutes. Peel pineapple and remove core. Use a knife to cut out eyes in a spiral pattern. Set in a baking dish and cover with syrup. Cut vanilla beans in half and stick into sides of pineapple. Bake at 350 degrees for 1 to 1 ½ hours.
