Pineapple Sputnik

Ingredients

Pineapple Sputnik - 10/8/2001

1 cup water 1/2 cup sugar
Juice of 1/2 orange Juice of 1 lemon
Grated zest of 1 orange Grated zest of 1 lemon
1 Tbl. ginger 1 pineapple
4-5 vanilla beans

Directions

To make syrup, heat water, sugar, orange and lemon juice and zest and ginger. Bring to boil, then let simmer 2-3 minutes. Peel pineapple and remove core. Use a knife to cut out eyes in a spiral pattern. Set in a baking dish and cover with syrup. Cut vanilla beans in half and stick into sides of pineapple. Bake at 350 degrees for 1 to 1 ½ hours. Serves 4.
