Mixed Berry DessertBy Todd JohnsonIngredients
DirectionsTo make sabayon sauce, cook egg yolks and sugar on stove over a double broiler. Constantly whip until it comes to thick sauce at 165 degrees. Add 1 Tbl. Grand Marnier. Remove from heat and cool in an ice bath. Keep whisking. Whip cream and fold into cooled egg mixture. Add 1 Tbl. to a glass. Top with washed berries (like blueberries, blackberries and/or raspberries). Cover with more of the sabayon sauce.Fill a flavor injector with Grand Marnier. A flavor injector looks like a syringe but it's used in the kitchen. You can find them at speciality kitchen stores. Inject the strawberries with Grand Marnier at the stem. Put on top of the berries and sabayon sauce. Recipe from Mike Armstrong, Royal Argosy |
