DirectionsTo make sauce, remove husks from tomatillos. Chop pepper, garlic, tomatillos and cilantro. Put in blender with lime juice. Blend until smooth. Heat oil on a griddle or in a saute pan. Brown Queso cotija on both sides. Queso cotija is a mild Mexican cheese available at the Pike Place Market, other speciality markets and some grocery stores. Serve browned cheese with sauce.
