Ingredients

Queso Asado-Mexican Grilled Cheese - 6/3/2002

1/2 lb. Queso cotija 1 clove garlic
1 serrano pepper 8 tomatillos
1/2 bunch cilantro 1/3 cup lime juice

Directions

To make sauce, remove husks from tomatillos. Chop pepper, garlic, tomatillos and cilantro. Put in blender with lime juice. Blend until smooth. Heat oil on a griddle or in a saute pan. Brown Queso cotija on both sides. Queso cotija is a mild Mexican cheese available at the Pike Place Market, other speciality markets and some grocery stores. Serve browned cheese with sauce. Serves 4.
