Ingredients

Italian Tomato Crostini - 8/18/2000

4 slices hearty rustic bread 2 oz. olive oil
1/4 lb. goat cheese 3 Roma tomatoes
1 tsp. kosher salt 1/2 tsp. black pepper
2 oz. herb mix (oregano, rosemary, thyme) 4 sprigs basil

Directions

Grill or toast bread slices. Brush with olive oil. Top with slices of goat cheese. Cover with herb mix. Top with sliced tomatoes. Season with salt and pepper. Drizzle a little more olive oil over the top. Bake at 350-400 degrees for 3-4 minutes until warm. Serves 2.
