DirectionsChoose 5 heirloom tomatoes of different varieties and colors. To make a basil vinaigrette, put garlic, mustard, salt, pepper, basil and vinegar in a food processor. Turn on and slowly add olive oil to emulsify. Slice tomatoes and stack one on top of the other with the largest on the bottom. Pour vinaigrette over the top and garnish with fresh basil.
