Ingredients

Strawberry Shortcake - 5/21/2001

2 soft biscuits (see 5/18/01 recipe) 2 pints strawberries
1 cup sugar 1 cup water
1 cup strawberry puree 2 large scoops vanilla ice cream
1 cup heavy cream 1 tsp. vanilla

Directions

Bring sugar and water to a boil to make a simple syrup. Pour over sliced strawberries. Add strawberry puree and let rest 20 minutes. Slice soft biscuits in half. Optional: You can warm them in the oven or microwave. Cover bottom half of biscuit with 1 pint strawberries. Add 1 scoop vanilla ice cream, then the top half of the biscuit. Add vanilla to cream and whip. Put one big scoop of whipped cream over the biscuit and strawberries. Serves 4.
