Salmon Wrapped Onion Garlic SticksBy Todd JohnsonIngredients
DirectionsBring butter and water to a boil in a saucepan. Add garlic puree. Remove pan from heat and fold in flour a little at a time until incorporated well. Return to heat and let the mixture form into a ball. Let cool for 2-3 minutes, then mix in the eggs one at a time.Put dough in a small piping tube or bag. Prepare a cookie sheet with parchment paper or non-stick cooking spray. Pipe dough into 3" sticks. Reconstitute the dried onion in hot water and drain. Sprinkle onion and salt over sticks. Bake at 375 degrees for 15-20 minutes until golden brown all over. Let sticks cool, then wrap with smoked salmon slices. You can also use ham, prosciutto or serve them plain. Recipe makes approximately 70 small sticks. You can keep any extras in an air-tight container for about a week. Recipe from Kerry Sear, Cascadia |
