Spinach Strawberry Salad

Ingredients

Spinach Strawberry Salad - 6/14/2004

3-4 bunches spinach 1 cup sugar
3/4 cup white vinegar 2 Tbl. minced onion
2 1/4 cups vegetable oil 2 Tbl. poppy seeds
14 strawberries 4 Tbl. macadamia nuts

Directions

Wash spinach and cut into 1 1/2" pieces. Set aside.

To make the dressing, mix sugar, white vinegar and onions in a blender. Drizzle in vegetable oil to emulsify. Add 6 strawberries to blender. Turn off blender and stir in poppy seeds. Refrigerate before using. This recipe makes 3 1/2 cups, so you'll have some left over.

Toss spinach with dressing. To serve, top salad with macadamia nuts and 2 sliced strawberries on each plate. Serves 4-6.
