DirectionsWash spinach and cut into 1 1/2" pieces. Set aside.To make the dressing, mix sugar, white vinegar and onions in a blender. Drizzle in vegetable oil to emulsify. Add 6 strawberries to blender. Turn off blender and stir in poppy seeds. Refrigerate before using. This recipe makes 3 1/2 cups, so you'll have some left over. Toss spinach with dressing. To serve, top salad with macadamia nuts and 2 sliced strawberries on each plate. Serves 4-6. Recipe from Pat Donahue, Anthony's Homeport |
