Grilled Salmon with Peach Salsa

Ingredients

Grilled Salmon with Peach Salsa - 5/30/2005

2 8 oz. salmon filets 1 cup butter
1/4 cup lemon juice 2 white peaches
1 white nectarine 1 oz. green onion
1 Tbl. cilantro 1/2 oz. lime juice
2 tsp. sugar 1/2 tsp. salt
1/2 tsp. pepper

Directions

Melt butter. Add lemon juice and mix well. Set aside, but keep warm. For the peach salsa, remove pits from peaches and nectarine. Chop into 1" pieces. Mix with green onion, cilantro, lime juice and sugar. Refrigerate before using.

Season the salmon with salt and pepper. Brush with 1 Tbl. lemon butter and place on a hot grill. When the fish starts to cook around the edges, flip it over and baste the other side with more of the lemon butter.

Serve grilled salmon topped with the peach salsa. Serves 2.
