Grilled Salmon with Peach SalsaBy Todd JohnsonIngredients
DirectionsMelt butter. Add lemon juice and mix well. Set aside, but keep warm. For the peach salsa, remove pits from peaches and nectarine. Chop into 1" pieces. Mix with green onion, cilantro, lime juice and sugar. Refrigerate before using.Season the salmon with salt and pepper. Brush with 1 Tbl. lemon butter and place on a hot grill. When the fish starts to cook around the edges, flip it over and baste the other side with more of the lemon butter. Serve grilled salmon topped with the peach salsa. Serves 2.
