Hawaiian SteakBy Todd JohnsonIngredients
DirectionsTo make the marinade, mix water, soy sauce, brown sugar, Mirin, cilantro, ginger, garlic, red chili flakes and lemon slices in a large bowl. Adjust the taste by adding a little more water if necessary. Refrigerate overnight.Season steak with salt and pepper. You can use your favorite cut of steak. Chef Bauer recommends strip steaks for this recipe. Cover meat in marinade for at least 3 hours. Bigger cuts of meat need to marinate overnight. Grill on a barbeque to desired doneness. After removing the steak, put the marinade in a saucepan and heat to simmer. Add water to cut down on the salty taste, then add cornstarch to thicken. It makes a great teriyaki glaze to serve over the steak. Serves 2. Recipe from Chef Ralf Bauer, Sheraton Hotels Waikiki |
