Ingredients

Hawaiian Steak - 7/25/2003

2 lbs. steak 1 cup water
1 cup soy sauce 1 1/2 cups brown sugar
1/4 cup Mirin (Japanese wine) 1/4 cup chopped cilantro
1 Tbl. chopped ginger 1 tsp. chopped garlic
1 tsp. red chili flakes 1 sliced lemon
2 Tbl. cornstarch Salt and pepper to taste

Directions

To make the marinade, mix water, soy sauce, brown sugar, Mirin, cilantro, ginger, garlic, red chili flakes and lemon slices in a large bowl. Adjust the taste by adding a little more water if necessary. Refrigerate overnight.

Season steak with salt and pepper. You can use your favorite cut of steak. Chef Bauer recommends strip steaks for this recipe.

Cover meat in marinade for at least 3 hours. Bigger cuts of meat need to marinate overnight. Grill on a barbeque to desired doneness.

After removing the steak, put the marinade in a saucepan and heat to simmer. Add water to cut down on the salty taste, then add cornstarch to thicken. It makes a great teriyaki glaze to serve over the steak. Serves 2.
