Ingredients

Mahi Mahi with Pineapple Salsa - 8/8/2003

8 3 oz. each pieces Mahi Mahi Salt & pepper to taste
1 pineapple 1 cup diced papaya
2 diced small chili peppers 3 Tbl. diced Maui onion
2 Tbl. diced red onion 1 Tbl. each red, yellow, green pepper
2 Tbl. diced tomato 3 Tbl. cilantro
Juice from 2 limes

Directions

Season Mahi Mahi with salt and pepper. Cook on grill until inside is done, but still moist.

Cut pineapple and broil slices on the grill for a couple of minutes until black marks form.

To make the salsa, dice the grilled pineapple. Mix in a bowl with papaya, chili peppers, Maui onion, red onion, bell peppers, tomato and cilantro. Cover with the juice of 2 limes. Season with salt and pepper, then mix well.

Serve grilled fish topped with salsa. Serves 4.
