DirectionsCut off ends of the ripe plantains (they should be dark, not green). Remove the peel and cut into 1/4" slices.Melt butter in a saute pan over medium heat. Add plantains and cook until they turn light brown. Add cinnamon, cloves, brown sugar and lime juice. Cook for a minute to mix all the ingredients together. Remove the pan from heat and carefully add the rum. Return to the heat. The pan will flame, but after a minute the alcohol will burn off and flames will die down. Add the berries to the pan. Serve warm topped with vanilla or coconut ice cream. Serves 4. Recipe from Maritza Texeira, Gitano |
