Pineapple Guacamole

Ingredients

Pineapple Guacamole - 9/9/2005

6 ripe avocados 1 pineapple
1 bunch cilantro 1 yellow or Spanish onion
Juice from 3 limes 2 oz. olive oil
2 Thai or birds eye chilis (optional) Salt & pepper to taste

Directions

Peel and remove the core from the pinapple. Cut into hand sized pieces and brush with oilve oil. Place on a hot grill for 2-3 minutes per side. You can also cook them in a saute pan. You're looking for the sugar from the pineapple to caramelize by grilling it.

Let the grilled pineapple cool, then cut it into bite sized pieces. Place in a large bowl with chopped cilantro and diced onion. Add lime juice and olive oil. Season with salt and pepper. Mix all of the flavors together.

Peel avocados and cut into bite sized pieces. The Thai chilis are optional. If you use them, make sure and dice them into very small pieces since they are hot.

Add the avocados and Thai chilis to the bowl. Mix together, but be careful not to overstir or you'll bruise the avocados.

Serve with chips. Serves 6-8.
