Ingredients

Lemon & Caper Marinade - 7/25/2005

1 1/2 tsp. lemon zest 1 tsp. thyme
1 Tbl. chives 2 Tbl. capers
1 Tbl. lemon juice 1/4 cup olive oil
2 chicken breasts

Directions

Peel zest off of a lemon and mince 1 1/2 tsp. In a bowl, add thyme, chives and lemon juice.

Chop and mash capers. Add to bowl along with the olive oil. Whisk all the flavors together.

Cover chicken with mixture and marinate in the refrigerator for at least 30 minutes and up to 8 hours. You can also use this marinade with salmon, shrimp or Portobello mushrooms. Grill or saute chicken after marinating.

Recipe makes 1/3 cup marinade. Serves 2.
