DirectionsCombine walnuts, cranberries, red wine vinegar and sugar in a saucepan. Cook until the sugar dissolves. Let cool then add cinnamon to taste.Remove core from apples. Use a knife to carefully scoop out part of each apple. Replace apple with walnut-cranberry mixture. Place in a baking dish. Pour the 1/2 cup water in the bottom of the dish. Cover with parchement paper and foil. Bake at 350 degrees for 30 minutes until the apple is soft but doesn't turn to applesauce. Garnish with powdered sugar, nutmeg and/or cinnamon. Serves 4.
