Pina Colada Bread Pudding

Ingredients

Pina Colada Bread Pudding - 12/20/2004

1/4 cup butter 3 quarts Cuban or French bread crumbs
2 1/2 cups eggs 1 1/4 cup sugar
5 cups milk 1 Tbl. vanilla
1/2 cup coconut rum 1/2 cup shredded coconut
1/2 cup canned pineapple

Directions

Toss 3 Tbl. melted butter with bread cubes. Place on a sheet pan and bake at 350 degrees until golden.

Brush a medium-sized casserole dish with 1 Tbl. melted butter. Add toasted bread cubes.

Mix together eggs, sugar, milk, vanilla, coconut rum, shredded coconut, and pineapple. Pour over bread cubes. Press down on cubes until the absorb the liquid.

Bake at 300 degrees for one hour or until firm in the center. Serves 6-8.
