DirectionsIn a large bowl, combine Romaine lettuce and cabbage. Add carrots, red onion and mix of red, green and yellow bell peppers.Blanch Oriental egg noodles in hot water, then chill before adding to the salad. Squeeze lime juice over salad, then top with 3 oz. ginger soy vinaigrette. A recipe for the vinaigrette is also on our website. Toss well, then add basil and mint. Transfer to a large plate. Garnish with diced mango, grape tomatoes and diced avocado. Season chicken breast with your favorite poultry seasoning, then serve over salad. Serves 1. Recipe from Casey Miles, Joey's |
