Ingredients

Cheesecake - 7/21/2006

1 cup graham cracker crumbs 1/4 cup powdered sugar
2 oz. melted butter 1 lb. cream cheese
1 cup granulated sugar 3 whole eggs
1 egg yolk 1 1/2 tsp. vanilla
1 Tbl. lemon juice 1 cup sour cream

Directions

To make the crust, mix graham cracker crumbs, powdered sugar and melted butter. Place in a 9" springform cake pan. Press crust around the bottom of the pan and halfway up the sides. Bake in a 350 degree oven for 10 minutes.

To make the filling, place cream cheese and granulated sugar in a tabletop mixer. Mix at medium speed until the cheese is smooth.

Scrape sides of the bowl and add the eggs one at a time while the mixer is running. The mixture should be nice and smooth with no lumps of cream cheese.

Scrape the sides again. Turn on mixer and add the vanilla, lemon juice and sour cream. Once they are incorporated into the filling, turn the mixer off.

Pour filling into the pan. Bake at 275 degrees for 45 minutes to 1 hour. The filling should be set but not brown on top. Allow the cheesecake to cool before cutting. Serve with your favorite berries or sauce. Serves 8.
