Organic Apple Salad

Ingredients

5 organic Fuji apples

2 heads Romaine lettuce

1/4 cup Gogonzola cheese

1/4 cup spiced nuts

1/3 cup apple cider vinegar

2 Tbl. lemon juice

2 Tbl. red onion

1 cup olive oil

Directions

Chop Romaine lettuce into 1/2" squares. Chop 3 Fuji apples and put in a large bowl with the lettuce. Add Gorgonzola cheese and the spiced nuts.

You can buy spiced nuts or make your own. Melt 1/4 cup butter. Add 1/4 cup honey and a pinch of salt, pepper and Cayenne pepper. Add 2 tsp. water and bring to a soft boil. Place 2 cups walnuts on a sheetpan. Lightly toast in a 350 degree oven, then toss in the butter-honey mixture. Return walnuts to the sheet and bake an additional 15 minutes.

To make the vinaigrette, grate 2 apples with a box grater. Mix with apple cider vinegar, lemon juice and red onion. Slowly whisk in olive oil. Season with salt and pepper.

Toss vinaigrette in with salad to taste. Serves 4-6.
