Tri-Tip Steak & Collard Greens

Ingredients

2 8 oz. each Tri-Tip steaks

Steak rub

1 oz. yellow onion

1 oz. bacon

2 oz. roasted red peppers

2 oz. golden raisins

1 lb. collard greens

2 cups chicken stock

2 Tbl. butter

2 Tbl. olive oil

Directions

Coat steak with your favorite steak rub. You can also use just plain salt and pepper. Let steak sit for at least 30 minutes before cooking. Rub steak with olive oil, then cook on grill.

To make the collard greens, saute onions and bacon in 1 Tbl. olive oil. Add red peppers and golden raisins.

Cut the collard greens into thin strips and add to pan. Season with salt and pepper.

Cover with chicken stock or broth. Bring to a boil, then simmer 3-5 minutes. Once the stock reduces, finish with the butter. Serves 2.
