Ginger PancakesBy Todd JohnsonIngredients1 box pancake mix 2 tsp. ground ginger 1 1/2 cup whipped butter 1/4 cup honey 2-3 peaches 1/2 lb. bacon Salt and pepper to taste DirectionsMake pancake mix batter as directed on the box. Stir in ginger and let sit for a few minutes before cooking. This will help make your pancakes fluffier.Let the butter soften, then mix in honey. Refrigerate before using. Slice peaches and remove the core. Melt 1 Tbl. butter over high heat. Add peaches and season with a pinch of salt. Saute until the peaches soften but are still crisp. To make the pancakes, first melt 1 tsp. butter in a saute pan over medium heat. Add batter to the pan, but be careful not to pour in too much. As it cooks, the batter will start to bubble on the sides. Flip it over when the batter bubbles in the middle. Cook until both sides are golden brown. Top pancakes with sauteed peaches and a dollop of the honey whipped butter. Cook bacon and serve on the side. Serves 4. Recipe from Jonathan Langley, Iris Grill |
