Sweet Potato Gnocchi

Ingredients

1 large sweet potato (22 oz.)

1 cup flour

1/2 tsp. salt

1 egg

1 egg yolk

2 Tbl. butter

Directions

Bake sweet potato in a 350 degree oven for 45 minutes to 1 hour until soft. Let cool to room temperature, then peel and grate into a bowl with a coarse cheese grater.

Add flour and salt. Mix until flour is well incorporated. Add 1 egg and 1 egg yolk. Mix and form into a ball. If the dough is too wet, add a little flour.

Cover bowl with plastic wrap and let sit at room temperature for a half hour. Cut the dough into four quarters. Roll out each quarter on a floured surface into a 3/4" thick log. Cut the rolls into 1/2" pieces.

Cook gnocchi in boiling salted water for 3-4 minutes until it floats to the top. Drain and add to a saute pan with melted butter. Sear over medium heat until gnocchi turn golden brown. Serves 6.
