Ahi Tuna Tacos with Mango Salsa

DirectionsTo make ginger sauce, whisk wasabi with 1 tsp. water. Add ginger, garlic, rosemary, honey, peanut oil, rice wine vinegar, lime juice and soy sauce. Cook over medium heat until smooth. Add cornstarch mixed with 1 tsp. water. Remove from heat. Add 3 Tbl. sauce to mayonnaise.
To make mango salsa, combine mango, tomato, pickled ginger, shallots, jalapeno and 1/4 tsp. salt and pepper.
Rub tuna with olive oil. Season with 1 tsp. salt and pepper. Grill to medium rare. Top warm tortilla with ginger mayonnaise, tuna, ginger sauce and mango salsa. You can also add shredded cabbage and chopped green onions. Serves 4.

On May 2, I found a newly built Dark-eyed Oregon Junco nest in one of my hanging baskets. By May 9 we had 4 eggs. This past Monday, May 18, the eggs hatched, 3 between 9am and noon, the final one during the night into Tuesday.
I know this is a "played out" location - but I couldn't resist as the weather was so nice tonight!
