Ahi Tuna Tacos with Mango Salsa

DirectionsTo make ginger sauce, whisk wasabi with 1 tsp. water. Add ginger, garlic, rosemary, honey, peanut oil, rice wine vinegar, lime juice and soy sauce. Cook over medium heat until smooth. Add cornstarch mixed with 1 tsp. water. Remove from heat. Add 3 Tbl. sauce to mayonnaise.
To make mango salsa, combine mango, tomato, pickled ginger, shallots, jalapeno and 1/4 tsp. salt and pepper.
Rub tuna with olive oil. Season with 1 tsp. salt and pepper. Grill to medium rare. Top warm tortilla with ginger mayonnaise, tuna, ginger sauce and mango salsa. You can also add shredded cabbage and chopped green onions. Serves 4.

While I was busy working, suddenly I turned my head towards the window to see a perfect rainbow and a cruise ship moving fast towards it. Frantically I grabbed my camera and ran to the balcony to take the shot just when the ship appeared to be entering the rainbow.
A lot of guests had trouble getting to Nick and Jane's wedding, but there seemed to be a magical bubble around the wedding itself - sunny and only a few big gusts while safe in the church... until well into the cozy inside Broadmoor Golf Club reception.
I took this photo this afternoon at Kerry Park. It was windy, cloudy and a few drizzles falling at times.
