Ahi Tuna Tacos with Mango Salsa

Ingredients

Ahi Tuna Tacos with Mango Salsa - 7/10/1998

1 tsp. wasabi powder 1 Tbl. minced ginger
1 1/2 tsp. minced garlic 1/2 tsp. minced rosemary
1/4 cup honey 1/2 cup peanut oil
2 Tbl. rice wine vinegar 2 Tbl. lime juice
2 Tbl. soy sauce 1/4 tsp. cornstarch
2 tsp. cold water 1/2 cup mayonnaise
1 cup diced mango 1/2 cup diced tomato
1 Tbl. pickled ginger 1 Tbl. minced shallots
2 1/2 tsp. minced jalapeno 1/4 tsp. kosher salt and black pepper
1/2 lb. Ahi tuna (cut into 4 1/2 2 oz. olive oil

Directions

To make ginger sauce, whisk wasabi with 1 tsp. water. Add ginger, garlic, rosemary, honey, peanut oil, rice wine vinegar, lime juice and soy sauce. Cook over medium heat until smooth. Add cornstarch mixed with 1 tsp. water. Remove from heat. Add 3 Tbl. sauce to mayonnaise.

To make mango salsa, combine mango, tomato, pickled ginger, shallots, jalapeno and 1/4 tsp. salt and pepper.

Rub tuna with olive oil. Season with 1 tsp. salt and pepper. Grill to medium rare. Top warm tortilla with ginger mayonnaise, tuna, ginger sauce and mango salsa. You can also add shredded cabbage and chopped green onions. Serves 4.
