Ahi Tuna Tacos with Mango Salsa

DirectionsTo make ginger sauce, whisk wasabi with 1 tsp. water. Add ginger, garlic, rosemary, honey, peanut oil, rice wine vinegar, lime juice and soy sauce. Cook over medium heat until smooth. Add cornstarch mixed with 1 tsp. water. Remove from heat. Add 3 Tbl. sauce to mayonnaise.
To make mango salsa, combine mango, tomato, pickled ginger, shallots, jalapeno and 1/4 tsp. salt and pepper.
Rub tuna with olive oil. Season with 1 tsp. salt and pepper. Grill to medium rare. Top warm tortilla with ginger mayonnaise, tuna, ginger sauce and mango salsa. You can also add shredded cabbage and chopped green onions. Serves 4.

During my time in Seattle, WA, I've had the opportunity to take all sorts of interesting pictures. There is water everywhere here, and in this shot; it provides a perfect mirror to the road above.
These images were taken Friday and Saturday under with a bright moon. M42 is a 45 minute stack of 122 frames and M15 is a 34 minute stack of 14 frames. A Meade 6-inch refractor
and a Nikon D3100 was used for all the images. Stacking was
done with Deep Sky Stacker (freeware).
