Flank Steak with Corn Salsa

Ingredients

Flank Steak with Corn Salsa - 8/14/1998

4 6 oz. pieces of flank steak 1 tsp. ground ginger
1 tsp. cumin 1 tsp. chili powder
1 tsp. dry mustard Salt and pepper to taste
1/2 cup bacon strips 1 cup corn kernels
1 cup diced red onions 1 cup diced red peppers
1/2 cup chopped jalapeno 1/4 cup chopped cilantro

Directions

Mix ginger, cumin, chili powder, dry mustard, salt and pepper. Rub over flank steak. Marinate in refrigerator for 12 hours. Grill steaks 6-7 minutes per side to medium or medium rare. To make salsa, saute bacon in skillet. Once done, add corn, onions and red peppers. Add jalapeno and cook for 1-2 minutes over medium heat. Add salt and pepper to taste. Add cilantro at end and mix well. Serves 4.
