Ingredients

Mussels with Apples & Bacon - 6/7/2002

1 lb. mussels 4 oz. smoked bacon
2 shallots 1 tart apple
1 oz. apple cider 1/2 oz. apple cider vinegar
2 oz. heavy cream 1 oz. white wine
1 branch thyme Kosher salt & pepper to taste

Directions

Cook bacon over medium high heat in a wide saucepan. Just before it gets crisp, add shallots and diced apple. Cook until apple is slightly carmelized. Add cleaned and debearded mussels. Add a splash of white wine, apple cider and vinegar. Add cream and thyme. Season with salt and pepper. Cover and cook 2-3 minutes until all of the mussels are open and sauce is slightly thickened. Serves 2.
