Mussels with Apples & BaconBy Todd JohnsonIngredients
DirectionsCook bacon over medium high heat in a wide saucepan. Just before it gets crisp, add shallots and diced apple. Cook until apple is slightly carmelized. Add cleaned and debearded mussels. Add a splash of white wine, apple cider and vinegar. Add cream and thyme. Season with salt and pepper. Cover and cook 2-3 minutes until all of the mussels are open and sauce is slightly thickened.
