The 36 year old is the new executive chef at the Sorrento Hotel's Hunt Club - a spot recently vacated by Brian Sheehser, who manned the stove for more than a decade.

"I think Brian did more Italian, I do probably more French items," says Jason, who was originally hired as Brian's sous chef.

"Brian made me an offer and I came over to work here and then two weeks later Brian said he was leaving to open the Heathman (in Kirkland)."

Jason hasn't changed the menu much since taking the job 10 months ago.

"We have some of the staples that, you know, people come here and really love that have been going on forever. We're not going to just flip it upside down -- we just kind of put some different touches on it."

Still lots of fresh veggies, seafood and wild game.

"We're doing wild boar, we're doing some elk -- just different things like that. But Brian did do a lot of wild game also."

Jason has honed his skills at the Fish Club, The Herbfarm and, most recently, the Olympic Four Seasons hotel. A pretty impressive resume for someone who went to college for graphic design.

"I realized I wouldn't be able to sit still in a cubicle that long," he laughs. "I definitely like the energy in the restaurant and being on your feet and going all day."

He also loves the hotel's young, upbeat vibe. That's right - young!

"I think a lot of people think it's old and stuffy, and I think that's the biggest miss on it. We really try to keep the food updated with what's going on in the city and what's going on in the country."

If you've never been to the Sorrento, now is the perfect time to check it out. It's all decked out in holiday decorations, with visits by the Dickens Carolers.
